Veggies Nacho

Tortilla Chips
Shredded Taco Cheese

Place Chips and sprinkle cheese over the top of a cookie sheet.  Place in oven at 350* until cheese is melted over chips.

Cut up fresh veggies.  I used:
2 tomatoes
lettuce (I cut it up like shredded so the kids will have to eat it)
1 cucumber
shredded carrots

I put lunch meat turkey in the food processor.

Sprinkle veggies and meat over the top of the chips and cheese.
I recommend sticking with veggies that you know your kids will eat.

Sweet Treats

Refrigerated biscuit dough
Cinnamon
Sugar

Preheat over to directions on biscuit dough.  Cut or pull biscuit into 4ths.  Mix cinnamon and sugar, more sugar than cinnamon. Drop biscuit dough into cinnamon/sugar mix and roll around until coated.  Place on cookie sheet and bake just like the biscuit dough directions.

Kids can help roll the dough in cinnamon/sugar mix.

Salt Dough Decorations (craft project)

2c All-Purpose Flour
1c Salt
1c water

Mix together the flour and salt.  Slowly add the water to the dry mix.  When mix is wet knead on a lightly floured surface.  Shape or roll out, this is the creative part.  Let dry overnight or for 2-3 hours in the oven at 250 degrees.  Paint them with Acrylics or water colors.

We make these decorations a lot throughout the year for family and friends.  We've done pumpkins, cookie cutter snow flakes, snowmen, apples, and snow globes.  We keep it seasonal and I put the kids names on the back of the ones they paint with the year for a keepsake moment.

Beef Pot Pie

Serves 8 (I have a hungry crew of boys!)

2 refrigerated pie crust
4c cooked diced potatoes
20oz mixed veggies
3c cooked diced beef (I cooked my beef with garlic salt)
2 cans Cream of Golden Mushroom
2/3c water
2t Worcestershire sauce
2t thyme

Cooked the beef and potatoes first.  While that's going mixed together Golden Mushroom, water, Worcestershire, and thyme.  Diced up potatoes and beef  and add to soup mix.  Mix in veggies.  Place 1 pie crust on (cooking) sprayed square pan.  Add filling and place second pie crust on top.  Pinch sides together and cup a slit on the top.  Bake at 400 degrees for 35 minutes or until crust is browned.

Kid friendly: moderate (my older one will not touch anything with cooked veggies)

Smoothie Boo-boo

Easy Recipe

1 apple, sliced and peeled
10 grapes (if you don't want the grape bits peel the grape)
honey
7 ice cubes

Place everything in the blender and blend on medium or smoothie setting until, well, smooth!

Makes enough for 2 people.

Kid Friendly-if they love fruit, they'll beg for it!  Mine did.

Frozos (easy snack)

Dannon Dano-o-mino Yogurt cups
Plastic Take a Long spoons from the baby aisle

1.  Cut a small slit in the top of the yogurt cup just big enough for the spoon to fit through.
2.  Place the spoon through the slit.
3.  Place the yogurt cup in the freezer.

Takes a few hours so I recommend freezing them overnight and have ready for the next day.  Kids love to stick the spoons in the yogurt cup and watching them get placed in the freezer.

Kid Friendly:  Total Favorite!

My 4 yr old son calls them Frozos and will not call them anything else.

PB Chocolate Chip Cookies

Small bag of Betty Crocker Peanut Butter cookie mix
Vegetable Oil (I use extra virgin Olive Oil)
water
Large bag of Betty Crocker Chocolate Chip cookie mix
1 egg
1 stick of soften butter

Preheat oven according to directions on bag. Usually I use 350 degrees for non-stick pans.
1.  Mix up Peanut Butter cookie mix according to bag directions.
2.  Mix the Chocolate Chip cookie mix according to bag directions with the Peanut Butter mix.
3.  Spoon small amounts onto cookie sheets leaving an inch between your cookies.
4.  Bake for about 10 minutes or until golden brown on top.  To make them chewy, less golden on top.
5.  Place on cooling rack to cool.

Place cookies in an air tight container with a slice of bread to keep moist.
